Tilapia with White Beans, Blistered Tomatoes & Spinach (Feeds 2)
This version is built to be filling enough for two adults without needing rice or pasta. It’s hearty because it leans on:
- enough fish to feel substantial
- enough beans to make it satisfying
- enough vegetables for volume
- enough flavor so it feels like a real dinner, not “light food”
Ingredients
Protein + base
- 3 tilapia fillets (about 18–20 oz total)
- 1 large can cannellini beans (or 2 standard cans), drained and rinsed (about 2.5–3 cups beans total)
- 1 pint cherry tomatoes
Vegetables
- 1 medium yellow onion, thinly sliced
- 4 garlic cloves, sliced
- 1 full bag baby spinach (5 oz)
- 8 oz mushrooms, sliced (optional but highly recommended for extra savoriness)
Liquid / flavor
- ¾ cup chicken stock
- 1 lemon (zest + juice)
- 1 tbsp Dijon mustard
- 1–2 tbsp olive oil
- 2 tbsp grated parmesan (optional, but excellent)
- pinch red pepper flakes
Tilapia seasoning
- salt
- black pepper
- garlic powder
- smoked paprika
Optional make it heartier
Choose one
- 8–10 baby potatoes, roasted on the side or
- extra mushrooms + extra beans
For most people, the potatoes make this feel most like a full comfort-food dinner.
How to make it
- Roast potatoes first (optional but recommended)
If using:
- Halve baby potatoes
- Toss with olive oil, salt, pepper
- Roast at 425°F for about 25–30 min until crisp
- Season the tilapia
Pat dry and season both sides with:
- salt
- pepper
- garlic powder
- smoked paprika
- Build the flavor base
Heat 1 tbsp olive oil in a large skillet.
Add:
- onion
- mushrooms (if using)
Cook 6–8 minutes until softened and browned.
Then add:
- garlic
- pinch red pepper flakes
Cook 30 seconds.
- Blister the tomatoes
Add cherry tomatoes and cook 4–5 minutes until they begin to burst.
Press a few gently with the back of a spoon so they release juices.
- Add beans + stock
Add:
- white beans
- ¾ cup chicken stock
- Dijon
Stir and simmer 3–4 minutes.
- Add spinach
Stir in spinach by handfuls until wilted.
- Cook the tilapia
Push the bean mixture to the sides (or remove temporarily).
Add a little oil and sear tilapia 3–4 minutes per side until lightly golden and flakes easily.
- Finish
Nestle fish into the skillet.
Finish with:
- lemon juice
- parmesan
- drizzle of olive oil
