This is a simple gluten-free batter for frying vegetables, fish, or taco fillings.

Ingredients

  • gluten-free self-raising flour
  • soda water
  • garlic, blended or finely minced
  • chili, blended or finely minced
  • black pepper
  • any extra herbs or spices you like
  • oil, for frying

Ratio

  • Use equal parts gluten-free self-raising flour and soda water by volume.

Examples:
- 1 cup flour + 1 cup soda water
- 1/2 cup flour + 1/2 cup soda water

Method

  1. In a bowl, combine equal parts gluten-free self-raising flour and soda water.
  2. Add blended garlic, chili, black pepper, and any other herbs or spices you want.
  3. Mix until you have a smooth batter.
  4. Heat a few inches of oil in a deep pan, or use a deep fryer.
  5. Coat vegetables, fish, or taco fillings in the batter.
  6. Fry until crisp and golden.
  7. Remove and drain on paper towels or a rack.
